Baking Student Named Finalist in National Chocolate Contest

Katrina M. Snelgrove, a baking and pastry arts student at Pennsylvania College of Technology, was recently named a finalist in a national chocolate-dessert competition sponsored by Barry Callebaut, the world's leading manufacturer of high-quality cocoa and chocolate products.

As a finalist in the Cacao Barry L'art du Chocolatier Challenge 2010, Snelgrove, a resident of Winchester, Va., will be flown to Chicago to recreate her plated-dessert recipe at the Barry Callebaut Chocolate Academy during the week of Jan. 10.

The contest includes both a professional and a student category. Six winners will be named in the student category, with a top prize of $3,000, appearance in a leading food publication, and $500 in Cacao Barry chocolate. In addition, two second-place and three third-place winners will receive prizes of cash and chocolate products.

"The Cacao Barry recipe contest is designed to encourage chefs and soon-to-be chefs to express their creativity through the medium of chocolate," Parveen Werner, marketing director for Barry Callebaut's Americas region, said in a press release.

To enter the Cacao Barry L'art du Chocolatier Challenge 2010, entrants submitted recipes (students for a plated-dessert, professionals for a flight of desserts). Students' entries were required to incorporate at least one Cacao Barry product.

Entries were judged on the basis of sensory appeal, creativity, presentation, standardized method of presentation and photography of the finished product.

During the finals in Chicago, Snelgrove will have three and half hours on the day of the competition to create eight identical plates of her dessert for a panel of judges made up of chefs and Barry Callebaut representatives.
